0014 Homemade Poultry Broth
Ingredients
• 2L water
• 1 poultry carcass
• 2 poultry livers (chopped)
• 1 carrot (sliced)
• 2 leeks (sliced)
• 1 pinch of salt
• 1 pinch of pepper
Cooking Time: 1 hour
Instructions
1. In a large pot, add the poultry carcass and chopped livers to 2L of water.
2. Simmer over low heat for 30 minutes, skimming off any foam that rises.
3. Add the sliced carrots and leeks, then season with salt and pepper.
4. Continue cooking for another 20 minutes.
5. Strain the broth through a fine sieve.
6. Use immediately for poultry-based sauces, soups, or stews.
💡 Tip: For a richer flavor, roast the carcass before simmering!
