0012 Homemade Vegetable Broth
Ingredients
• 50g leeks (thinly sliced)
• 50g carrots (thinly sliced)
• 40g celery (chopped)
• 50g turnips (thinly sliced)
• 50g tomatoes (diced)
• 30g parsley (chopped)
• 2L water
• 1 pinch of salt
• 1 pinch of pepper
Cooking Time: 1 hour
Instructions
1. In a large pot, add all the sliced vegetables and cover with cold water.
2. Bring to a slow simmer and cook over low heat for 40 minutes.
3. Skim off any foam that rises to the surface.
4. Season with salt and pepper to taste.
5. Strain the broth through a fine sieve without pressing the vegetables.
6. Use immediately as a base for soups, sauces, or light stews.
