Ingredients 3L water 400g veal shank (cut into pieces) 100g carrots (thinly sliced) 100g turnips (thinly sliced) 100g leeks (thinly sliced) 1 celery stalk (chopped) 30g salt 1 pinch of pepper Preparation Time:  3 hours Instructions In a large pot, simmer the veal shank in water over low heat for 1 hour , skimming off any foam that forms on the surface. After an hour, add the thinly sliced carrots, turnips, leeks, and celery. Season with salt. Continue simmering for another hour , allowing the flavors to blend.
