0011 Rich Beef Broth
Ingredients
• 400g beef shank (cut into chunks)
• 100g carrots (thinly sliced)
• 100g turnips (thinly sliced)
• 100g leeks (thinly sliced)
• 1 celery stalk (chopped)
• 30g coarse salt
• 2L water
Cooking Time: 3 hours
Instructions
1. In a large pot, simmer the beef shank in water over low heat for 1 hour. Skim off any foam that forms on the surface.
2. Add the sliced carrots, turnips, leeks, and celery. Season with salt.
3. Let it cook for another hour, allowing the flavors to blend and deepen.
4. Strain the broth through a fine sieve.
5. Use immediately as a base for soups, sauces, or stews.
