0013 Homemade Veal Broth
Ingredients
- 3L water
- 400g veal shank (cut into pieces)
- 100g carrots (thinly sliced)
- 100g turnips (thinly sliced)
- 100g leeks (thinly sliced)
- 1 celery stalk (chopped)
- 30g salt
- 1 pinch of pepper
Preparation Time: 3 hours
Instructions
- In a large pot, simmer the veal shank in water over low heat for 1 hour, skimming off any foam that forms on the surface.
- After an hour, add the thinly sliced carrots, turnips, leeks, and celery. Season with salt.
- Continue simmering for another hour, allowing the flavors to blend.
- Strain the broth through a fine sieve and let it cool.
- Remove any excess fat before using.
💡 Tip: Use this rich veal broth immediately as a base for soups, sauces, or risottos. For deeper flavor, store it in the fridge overnight and skim off any remaining fat before reheating!
