0013 Homemade Veal Broth

Ingredients

  • 3L water
  • 400g veal shank (cut into pieces)
  • 100g carrots (thinly sliced)
  • 100g turnips (thinly sliced)
  • 100g leeks (thinly sliced)
  • 1 celery stalk (chopped)
  • 30g salt
  • 1 pinch of pepper

Preparation Time: 3 hours

Instructions

  1. In a large pot, simmer the veal shank in water over low heat for 1 hour, skimming off any foam that forms on the surface.
  2. After an hour, add the thinly sliced carrots, turnips, leeks, and celery. Season with salt.
  3. Continue simmering for another hour, allowing the flavors to blend.
  4. Strain the broth through a fine sieve and let it cool.
  5. Remove any excess fat before using.

💡 Tip: Use this rich veal broth immediately as a base for soups, sauces, or risottos. For deeper flavor, store it in the fridge overnight and skim off any remaining fat before reheating!
